If you want to try a simple and delicious sweet, try our homemade lemon cake without sugar. It is low in calories, refreshing and it`s recommended for all members of the family thanks to its many health properties, as we already know, lemon have infinite number of tasty benefits.
The recipe that we present today is suitable for diabetics because we use stevia, which is suitable for people who are on a diet, and for those who have to control the amount of sugar. Get ready to enjoy one of the most delicious cakes.
For the pastry
- a cup and a half of flour
- 100 g butter
- half a tablespoon of stevia powder
- 3 egg yolks
- 3 tablespoons cold water
For the filling of lemon cake
- the juice of 5 lemons
- half a teaspoon of stevia powder
- 75 g cornstarch (corn flour)
- 6 egg yolks
- 4 egg whites
- 45 g butter
- half a glass of cold milk
- 3 chopped walnuts
Start by greasing the mold with butter. Now preheat the oven to 170 ºC. A bit later, start to prepare the pastry. It is very simple, just follow some steps: Take a bowl and first mix the flour with the butter, so that the paste is thinner. You simply use your fingertips to mix the specified amount of flour with the butter.
Now add stevia, three egg yolks and water, you need to ensure that the dough has consistency. Knead well until it forms a ball. Then, wrap with plastic wrap and leave in the fridge for about 15 minutes.
After 15 minutes, you will see that the mixture is completely homogeneous. It’s time to put it into the mold. To do this, you have to shape it to do it adhere well, but remember to make a space of at least two centimeters, high enough to contain the filling within it.
Bake the pastry for about 25 minutes. Once baked let cool to room temperature. Now prepare the lemon filling, it`s way too easy. Begin squeezing the lemon juice and add half a teaspoon of stevia. Now put the juice in a pot on the stove to warm it up and let it boil. Then take half a glass of cold milk and add in the 75 grams of maize flour, stirring well to make it consistent. When you no longer see lumps, add this mixture to the pot where lemon juice is boiling. In this way the mixture will thicken and avoid annoying lumps in the cream.
Next, add the egg yolks and butter, never stop turning. Once ready, remove from the heat and let cool to room temperature. Then, pour this delicious mixture into the pastry and place in the oven another five minutes.
Now make the meringues. To do it whip the egg whites, once ready, use them to decorate the cake to your liking. Finally, you can put on top of the chopped nuts for a touch of extra flavor.
